Nicola was born and raised in Manchester, England until the age of 12 when her parents moved to California.
For many years Nicola was a nanny taking care of children of all ages, which she loved very much, while in her
spare time she also loved to bake cakes, cookies, anything that made her friends and family come back for more!
In 2002 she met her husband Matt who said to her "if you love baking, why not go to school?" Well at the age of 30
she never dreamed she could return to the classroom, but just as Matt had predicted she enjoyed every minute.
It was there she was introduced to the art of chocolate making which was such a joy to her to create something
that gave each person a happiness that only chocolate can bring.
In 2005 Nicola was making a chocolate covered cake for a friend, she happened to have too much chocolate mixture,
so decided to put it in the fridge. The next day she used the left over mixture to make what is known today as one
of the best truffles in the world!
