The Top Tier

Almost every bride asks me “What is the tradition regarding keeping the top tier of the wedding cake”? And I always tell them the same thing, exactly what my mum told me!

The top tier is a very old tradition started in England where either a portion
of the wedding cake or the top tier was stored and eaten by the couple on their first wedding anniversary or at the christening of their first child, (which ever comes first)
But…The wedding cakes were made entirely of fruit cake which was
soaked heavily in brandy. The cake was then wrapped tightly in saran wrap, then wrapped again in tin foil and placed in an air tight container, which was then stored in the airing cupboard (or linen closet in the U.S) not in the freezer as most people think.
With that tradition in mind, fruit cake would be the only cake that would
survive a year or more (with re-soaking once in a while), and it is actually quite tasty!
